    Chicken parm…but make it buffalo: How I cook one dinner two ways (and keep everyone happy)

    It’s no secret in the spirit of this health and wellness platform that I like to be mindful of what I eat. BUT I also love food, flavor, and family dinners. A conversation about this at work today led someone asking me, “Do you make two different dinners every night?”

    The answer: yes…and no.

    I don’t make two separate dinners – I make one meal, two ways.
    Small tweaks keep my version health-conscious without making me feel like I’m missing out.

    Tonight’s example? A little something I like to call the Buffalo “Chicken Parm Remix.

    Same Song, New Beat

    This started as my usual chicken parm night, but I was feeling a little spicy – I swapped the marinara for mild buffalo sauce and mozzarella for crumbled blue cheese.

    The result? All the comfort, with a tangy twist – and a nutrition upgrade that kept me on track without isolating me from the family table.

    For me:

    • I grilled my chicken in Pam instead of olive oil
    • I skipped the breading
    • I carefully measured my buffalo sauce and cheese according to my daily allotment

    For my family:

    • Breaded cutlets pan-fried in extra virgin olive oil
    • Full-flavor sauce and blue cheese sprinkled freely

    And for everyone: brown rice instead of white – a simple swap the whole family can get on board with.

    The Details That Make It Work

    I don’t need to overhaul every ingredient. It’s just about being intentional.

    • Broccoli: I season mine with garlic powder and pepper only; the family can add salt if they want.
    • Measurements: I portion my servings instead of eyeballing them like my late Italian grandmother (who’s definitely side-eyeing me from above for swapping her precious “moninana” and parmesan for buffalo and blue cheese).
    • Balance: My bowl hits all the macros – two servings of whole grains, a few of veggies, plus a serving each of protein, dairy, and healthy fat.

    It’s realistic, sustainable, and (bonus!) still delicious.

    The Buffalo “Chicken Parm Remix” Recipe

    Serves: 4
    Total time: ~25 minutes

    Ingredients:

    • 4 thin-sliced chicken cutlets
    • Extra virgin olive oil (for family version)
    • Nonstick Pam cooking spray (for mine)
    • ½ cup Italian breadcrumbs (for family cutlets – a household fave is 4C Seasoned)
    • 2 eggs
    • ¼ cup mild buffalo sauce
    • ¼ cup crumbled blue cheese
    • 1 cup uncooked brown rice
    • 2 cups water
    • 2 cups broccoli florets
    • Garlic powder, black pepper, and optional salt

    Directions:

    1. Start with the rice:
      • In a medium pot, combine 2 cups water and 1 cup brown rice
      • Bring to a boil, then reduce to a simmer and cover
      • Cook for 45 minutes, until water is absorbed
      • Fluff with a fork before serving
    2. Brown the chicken:
      • Heat olive oil (or Pam) over medium-high heat
      • Sear cutlets for 3–4 minutes per side until golden
      • For my portion: grill unbreaded
      • For the family: dredge in egg + breadcrumbs before browning
    3. Bake the chicken:
      • Preheat oven to 400°F
      • Transfer to a baking dish
      • Drizzle buffalo sauce over each piece
      • Sprinkle blue cheese
      • Bake 10–12 minutes total (internal temp 165°F)
    4. Season and roast the broccoli:
      • Mine: EVOO + garlic powder + pepper only
      • Family: All of the above + salt (if desired)
      • Throw in the oven right along with the chicken!
    5. Assemble:
      • Layer brown rice → broccoli → sliced buffalo chicken.
      • Add medium or spicy buffalo sauce if you like heat. I don’t.

    Result: One dinner. Two ways. Everyone’s happy…including my scale.

    Healthy eating doesn’t have to mean cooking twice or eating separately. It’s about finding balance that fits your reality – the mom hat, the wellness hat, and the “I just want something that tastes amazing without feeling like I’m dieting” hat.

    Same effort. Different details.
